If you’ve never had Easter Pie, I’m sorry… you have seriously been missing out! But don’t worry, I have a wonderful (simple) family recipe for you to try.
Easter Pie is an Italian dish that can be prepared abaggilion different ways. But no matter where you have it, it will always include Ricotta and Eggs. In my house our Easter Pie is sweet (not savory), and not only do we use Ricotta and Eggs, but we add in some Pastina! Since you are probably scratching your head at this gross sounding concoction just trust me.. it’s amazing. It tastes like a cheesecake and rice pudding decided to get together and have a delicious baby. (if that mental picture doesn’t get you baking I do not know what will!!)
- 1.5lbs Ricotta Cheese
- 1 cup Sugar
- 3 Large Eggs
- 1 tsp vanilla
- 1/2 cup cooked pastina
- Cinnamon (sprinkled after cooled)
Beat the eggs, add in the sugar and vanilla, than the ricotta and pastina. Pour into a greased 9×13 baking dish and bake at 325 for 2 hours (check on it around 1hr 40, mine was starting to brown so I took it out.). Let cool, and then sprinkle with cinnamon. (Keep in the fridge once you are finished. I am not sure why but my Easter Pie always gets tastier the longer it sits..so tomorrow your taste buds will be even happier then today).
